Lamb Recipes from The Ranch

 

 

Lamb Shanks

Take 4-6 shanks season with HC6 seasoning (Decoty Seasoning Supreme or your favorite rub) and brown in skillet with olive oil. Place in Crock Pot with 1 can diced tomatoes, 1 large onion thinly sliced, 1 cup water, drizzle with olive oil, sprinkle all with garlic salt. Simmer in Crock Pot for 4-6 hours. Watch water level and make sure some water remains during cooking. Serve with rice or vegetable of your choice.

Options: Add a splash up to 1 cup red wine, or fresh mushrooms.

 


 

Shepherds Pie

1 1/2 Pounds Ground lamb

1 cup English Peas

1 Cup Beef Broth

1 Tbsp Worcestershire Sauce

2 Tsp tomato paste

2 Tbsp Flour

Sea Salt

1 large onion chopped

2 tbsp minced garlic

HC6 Lamb Seasoning

1 Tsp Thyme leaves, chopped

1 1/2 pounds potatoes

1/4 cup cream

3 Tbsp salted butter

2 egg yolks

 

Peel the potatoes and cut into pieces, cover and bring to a boil. Simmer until easily crushed with tongs. Drain potatoes add cream, butter, 3/4 tsp salt and pepper to taste and mash. Stir in the yolk until well combined. Preheat oven to 400 F.

While potatoes are cooking prepare the filling. Place olive oil in to a saute pan and set on medium heat. Add onions and cook 3-4 minutes. Add garlic and stir to combine. Add lamb and HC6 Seasoning (Decoty Seasoning Supreme or your favorite rub) to taste and cook until browned. Sprinkle meat with flour and toss to coat ,cooking for another minute. Add tomato paste, beef broth, Worcestershire, thyme, and stir to combine. Bring to boil, reduce, cover and simmer slowly 10-12 minutes or until sauce is slightly thickened. 

Add peas to the lamb mixture and spread evenly in a  11/7” glass baking dish. Top with mashed potatoes, starting around the edges to make a seal to prevent mixture from bubbling up and smooth with rubber spatula. Place in middle of oven and bake 25 minutes or just until potatoes begin to brown. Remove and cool 15 minutes before serving.

 


 

Dorper Lamb Burgers

Hand pat ground lamb into 1/3 to 1/2 pound patties season with garlic, salt, and pepper. Grill over medium coals or on griddle until desired doneness. Enjoy!

 


 

Dorper Lamb Chops

Trim and season loin, rib, or shoulder chops and allow to warm to near room temperature. Pan fry or grill until medium or medium rare. Don't over cook these babies!

 


 

Dorper Lamb Chili

Place 2 pounds of ground lamb in a stock pot and season with HC6 Gourmet Lamb Seasoning (Decoty Seasoning Supreme or your favorite rub) and cook until done. Gently drain (Philip does not drain any lamb fat!) and set aside in a bowl. Take 1 large or two medium onions, dice them, and cook in the stock pot until they begin to brown. Add 1 can petite diced tomatoes and cook with the onions for a short time. Add the cooked ground lamb back to the stock pot with the tomatoes, onions, 2 Tablespoons Mortons Chili Seasoning, 1 Tablespoon Worcestershire sauce, salt to taste, and cover with water. Bring to a boil then cover and simmer for 1 hour. Serve with all your favorites such as grated cheese, sour cream, and chips, crackers, or bread.

 


 

Dorper Lamb Sliders

1 lb. Dorper Lamb

2 TBSP minced garlic

2 TSP HC6 Seasoning (Decoty Seasoning Supreme or your favorite rub) 

1 TBSP olive oil

8-10 fresh rolls

 In large bowl combine ingredients except oil. Form small slider patties sized to fit on the rolls. Heat pan or grill and cook until medium.

Tzatziki Yogurt Sauce 

Combine 1/2 cup plain Greek style yogurt, 1/2 TBSP minced garlic, 1 TBSP olive oil, 2 TSP fresh lemon juice, 1 TBSP chopped fresh parsley, 1/2 TSP salt and pepper to taste. 

Serve slider on rolls divided in two with Tzatziki sauce and other condiments of your choice.

Options: Add 1 chopped shallot and 1 egg to lamb burger mixture.
